I have found several where you boil pork neck bones, pick the meat from the bones and strain the stock, put the meat pulled, use salt, pepper, poultry seasonings. His back glances to me while eating it, I couldn't tell if he hated it or I got it right. Once cool, de-bone and chop the meat finely and set aside.
